I had bookmarked a recipe from someone on- I think- my friends list, but I still haven't managed to recover any of my data, and now I want to make it and I can't find it.

It was for eggplant, sliced and fried with eggs, or an egg batter. Does that sound familiar to anyone?

Thanks for posting this; I actually just cooked the eggplant like that for dinner tonight! It was too much oil for me, though; suggestions on how to cut down on the oil?

Did you put the eggplant on paper towels after frying them? You could try patting them down with napkins too, but I don't think you could really alter the recipe and still have it work. If you mix water in the oil, for instance, it'll lower the temperature and I'm not sure if it'd cook right. Maybe you could try a low-fat oil or something that would taste less greasy.

That could work- just make sure you always have enough to cover the pan, or you'll just burn stuff instead of cooking it.

I'm actually getting better; you'd be surprised (pleasantly, I hope ^^). Tonight I'm cooking for myself and my roommate. I make a mean artichoke. With dip! :D
